Three day rack of pork

  • While I was visiting home over the holidays, my mom came back from the grocery store with a huge chunk of pork. Bone in, with a big strip of fat still on it, she wanted it done the old fashioned way and tasked me with cooking it. A little sleuthing came up with this photo/recipe from the James Beard Foundation. How could you not want to eat that! The crust alone looks like it'd be worth the trouble. Plus, it has a dry rub, which I've come to believe is the best way to cook pork. 
The recipe is a bit involved: I cut down the amount of time the meat was just sitting and absorbing flavor to a couple hours for brining and the rub, each. I didn't use granulated garlic, but should have, since fresh garlic just picks up all the paprika. And I used white wine instead of stock, which I think worked really well. 

Best cooked with a meat thermometer to help you out. 

P.S. The herby pork crust was worth it. 

  • 1 cup plus 1 teaspoon kosher salt
  • 4 bay leaves
  • 1 tablespoon peppercorns
  • 6 sprigs fresh thyme
  • 1 rack of pork, 8 to 10 ribs, trimmed, bones frenched, tied (about 6 1/2 pounds)
  • 2 teaspoons granulated garlic
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons Hungarian paprika
  • 10 cloves garlic, peeled
  • 3 tablespoons vegetable oil
  • 1 teaspoon whole caraway seeds
  • 8 tablespoons beef, veal, vegetable, or chicken stock
Three days before you intend to serve the roast, prepare the brine. In a large pot, combine 10 cups of water with one cup of salt, the bay leaves, peppercorns, and fresh thyme. Bring to a boil, simmer for 3 or 4 minutes, and turn off the heat. Add another 6 cups of cold water to the brine to cool and dilute it. Place the rack of pork in a container large enough to allow for it to be submerged. When the brine has come down to room temperature, pour it over the pork. Add up to 4 more cups of water if necessary to submerge the meat. If you have to add more brine than that to cover, do so in the proportion of 1/4 cup salt per 5 cups of water. Refrigerate the pork, submerged, for 24 hours.
Combine the granulated garlic, black pepper, dried thyme, paprika, and the remaining teaspoon of salt. Mix well. Remove the pork from the brine and pat dry. Rub this spice mixture all over the pork. Cut 4 or 5 of the garlic cloves into slivers and insert them in and around the pork. Wrap tightly in plastic wrap and refrigerate for 1 to 2 days.
To cook the pork, preheat the oven to 500ºF. Place the pork, fat-side up, on a rack in a roasting pan. Drizzle evenly with the vegetable oil and sprinkle with caraway. Place the pork in the oven for 15 minutes. Add the remaining cloves of garlic to the roasting pan and let cook another minute or two. Pour in enough stock to come halfway up the roast. Let cook for 1 hour, basting every 20 minutes or so. Turn down the temperature to 350ºF and continue cooking another 1 1/2 to 2 hours, until the meat is dark brown and tender. To test, insert a small knife; it should go in like butter when the roast is done. Remove from the oven. Slice the roast into chops, between the bones. Serve the roast immediately, or store the slices in the cooking liquid and reheat them in the liquid when you are ready to serve.

Chinese spareribs in black bean garlic sauce

Ingredients:
vegetable oil
pork spare ribs, cut to 1-inch pieces
1 teaspoon chopped ginger
3 cloves garlic chopped
1 medium-sized leek, thinly sliced
White sesame seeds for garnish, optional
Thinly sliced scallions optional
Sauce:
3 tablespoons spicy black bean sauce (or 2 tablespoons black bean sauce with 1/2 tablespoon chili oil)
2 tablespoons dark soy sauce
1 tablespoon Chinese rice wine
1 teaspoon brown sugar
1 teaspoon cornstarch
1/2 cup water
Method:
Mix together ingredients for the sauce. Set aside.
In a wok or frying pan, heat oil over medium-high heat. Add spare ribs and stir-fry until brown on all sides, about 4 to 5 minutes. Add ginger, garlic, and leeks and cook until aromatic, about 1 minute. Pour in sauce mixture. Cover with a lid and simmer for about 10 minutes. Sauce should be reduced enough to coat the spare ribs. Transfer to serving plate, garnish with optional sesame seeds and scallions, and serve with rice.

Tuna, red pepper, chickpea couscous

1 cup cous cous
1 can tuna, drained
1 roasted red pepper, diced
1/2 cup chickpeas
a few sprigs parsley, chopped
pecorino romano
3T olive oil
2T lemon juice
2t hot pepper flakes
salt, pepper

red onion?

Asian cabbage


  • 1/2 head cabbage, cored and thinly sliced.
  • 2 strips bacon
  • 1 tsp minced ginger
  • 3 scallions
  • 2 cloves garlic
  • 1 T oil
  • 2 t sesame oil

Fry bacon in small pieces. Separate green and white parts of the scallions. Slice white parts and mince garlic. Sautee whites, garlic, and ginger. Add cabbage and oils, stir fry for 5 minutes until cabbage starts to wilt. Addg scallion greens, vinegar, soy and oyster sauces. Cook for a 2-3 more minutes. Add salt, black pepper, and crushed red pepper to taste.

Dry rub pork tenderloin and honey bourbon bbq pan glaze


  • 1 pork tenderloin
  • 1 T dry rub
Sauce


  • 1.5 oz bourbon
  • 1 T honey
  • 2 T ketchup or tomato paste


Preheat oven to 425 degress. Pat the tenderloin dry. Apply rub. Brush on oil, place in pan on high heat to sear, 3-4minutes a side. Place in baking pan, cook for 20 minutes. After baking, let stand in frying pan, covered.

Put drippings from baking dish in frying pan, add 2 T water and simmer. Add bourbon. Once reduced, mix in ketchup and honey.

Creamy cole slaw


  • half head green cabbage, shredded
  • half head red cabbage, shredded
  • 1 large carrot, shredded
Dressing
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 T sugar
  • 1.5 T lemon juice
  • 1.5 T cider vinegar
  • 1 t white vinegar
  • 1 t mustard powder'
  • salt
  • pepper
  • dash of hot sauce
Let chill in refrigerator for an hour.

Sushi Rice

Rinse 1 cup sushi rice until water runs clear. Add to saucepan. Add 1 C water. Bring to boil on medium heat, stir and cover. Turn heat to low and cook 15-20 min. Turn off heat and let rest for 5-10 minutes.
